New year, new challenges...

We are now in the second week of the new year and had already two Birthdays! Jamie had a Birthday and two days later her daddy's Birthday. I am glad that all the birthdays and holidays are over. It is always fun when November rolls around and you can look forward to Birthdays, Thanksgiving, Christmas - did I mention Birthdays - New Year's. Time off from schooling and activities. This is really a great time to spend together and just have fun and read and do whatever, catch up with cleaning, bake some bread and cookies. We didn't do any " school" between Christmas and the end of the first week in January. I must say, I do enjoy having a routine again. I think some attitudes will be better - one of them is mine. 
Nina has had stomach problems for many years and we finally got her all tested out and she is just fine! So, why is she still in pain? We can't seem to figure it out. After looking at some of her test results again it seems to me that there might be a gluten sensitivity. It is not celiac disease, she was tested for that, but a sensitivity. So now, because I have tried a ton of other things that haven't worked, I have decided to go gluten free for four weeks. Well, I told the kids two weeks, but that will be extended. Then we will evaluate again and see how she is doing. Of course the whole family will go GF with her. So this is the new challenge for now. The kids really like cereal, but that's out for now. I did find a recipe for homemade granola and made last night. It was really fast and good, we eat it with Almond milk. It doesn't hurt to cut down a little on the dairy, though we still use butter, cheese and yogurt. I read about baking with GF flours and went to the health food store today and bought different flours. Millet, Corn, brown rice, white rice, buckwheat, coconut and some other flour I can't remember right now. I also bought guar gum to substitute for the gluten. Now I have to find some recipes for cake, cookies and bread. I searched the web and am completely overwhelmed. So, I am going to think about what we want most and will try something tomorrow.
